Manang Simple Lugawan at Maybancal

I ate my breakfast at our favorite Lugawan at Maybancal.  And I managed to interview Manang Simple, the owner.

She says that on a Sunday, she cooks 4 potfuls of Lugaw (porridge) to feed the hungry hordes of cyclists who converge at her lugawan from Angono, Taytay, Cardona,  Cainta, Marikina and Mandaluyong and elsewhere.  The 4 potfuls is a lot.  She closes before ll, because she will have to move over to the cockpit to sell more food.

She says that her secret of nice tasting lugaw (porridge) are:  use only ordinary (not glutinous rice) and cook slowly using wood.

Thats a good business for her and her PTM are cylists.  She serves only lugaw, lomi, pansit (noodles) and rice cakes.  The favorite drink is Mountain Dew.
